1 can salmon
2 eggs
buttery crackers, crushed (such as Ritz)
parsley flakes
red pepper flakes (to taste)
salt and pepper (to taste)

Directions:
Directions:
Drain salmon well and remove skin and bones. Place into medium mixing bowl and mash up with a fork. Add all other ingredients and mix together (mixture should be stiff enough to form patties, but not too dry). Form into patties and place in a pre-heated skillet, sprayed with a little non-stick spray, such as Pam. Cook until golden brown on both sides. Approximately 6 patties.

Yum! I love the addition of red pepper flakes - gives them a kick.
