2 T. vegetable oil
1 1/2 cups chopped celery
1 1/2 cups chopped onions or scallions (or both)
1 cup fresh bean sprouts, slightly chopped
1 cup cooked shrimp, chopped
2-3 cups cooked white rice (when boiling redice amount of water by 1/4 cup)
1-2 beaten eggs
salt, pepper and soy sauce

Directions:
Directions:
Put 2 T. vegetable oil in a large skillet. Heat to a very hot and stir fry the vegetables for about 1 minute. Push to a corner or around the edges of the pan. Stir fry the eggs until firm. Remove everything from the skillet. If pan is dry add a bit more oil and keep very hot. Stir fry rice for about 2 minutes add the vegetables, eggs and soy sauce to taste. Turn off the heat and season with salt and pepper (I use a touch of paprika as well.)
