1 medium yellow onion chopped
5 cloves garlic chopped
1 can tomato soup
2 small cans tomato sauce
8 oz bag rigatoni noodles
5-6 red potatoes peeled and cubed
Cumin, salt & pepper to taste
Apple cider vinegar



Directions:
Directions:
Sauté onion and garlic in vegetable or olive oil, when soft add tomato soup and tomato sauce. Simmer for about 5 minutes. Fill a medium sized boiler ¾ full of water. Bring to a boil. Add potatoes, cook until potatoes are tender. Add noodles, boil about 20-30 minutes.

Add cumin, salt, pepper and apple cider vinegar to taste.
