Ingredients: 3 whole chicken breasts, split in halves and boned 1/4 cup soy sauce 1 clove garlic, crushed 4 t. sugar 1 T. sherry 2 t. hoisin sauce 1 egg yolk 1 t. soy sauce 6 T. sesame seeds (or a bit more) 1 cup flour 1 cup peanut oil

Directions:Marinade chicken at room temperature in a mixture of the first 5 ingredients for 1-2 hours. Dip chicken in egg yolk that has been beaten with 1 t. soy sauce. Then dip in sesame seeds and finally in the flour. In a large skillet, fry the chicken in hot peanut oil until cooked through and crispy brown. Drain, cool and refrigerate until serving.
Make the following dressing: 1/4 cup sesame oil 1/4 cup white vinegar 2 T. soy sauce 2-3 T. sugar 1 t. crushed red pepper 3 cloves minced garlic 1 minced scallion
Make the salad as follows: 1 head lettuce, finely shredded (I use Romaine) 2 bunches of scallions, slivered 1 T. sesame seeds, toasted 1/4 cup chopped peanuts
Ten minutes before serving, cut the chicken into strips. Add to salad and toss with dressing. Serve. |
