4 c. uncooked rolled oats (quick oats okay)
1 c. wheat germ
1/3 c. instant nonfat dry milk
1 c. flaked coconut
1 c. chopped almonds
1/8 tsp. salt
1/2 tsp. cinnamon

1/4 c. canola oil
1/2 c. honey
1/2 c. brown sugar, packed
1 1/2 tsp. vanilla
1 1/2 c. chopped dried fruit (optional)

Preheat oven to 300 F. In a large bowl, mix oats, wheat germ, dry milk, coconut, salt and almonds. In a small saucepan, heat oil, honey and brown sugar until warm, stirring until brown sugar is dissolved. Remove from heat and stir in vanilla. Pour oil mixture over oat mixture, stirring to mix well. Pour into a shallow 9x13" (or larger) pan. Bake in preheated oven 25-30 min. until golden brown, stirring every 10 minutes. During last 5 minutes of baking, stir in dried fruit, if desired. Cool and store in airtight containers at room temperature. Use within 4 weeks.

After granola is baked, I like to pour a syrup over it to make oats clump together better. The syrup is 1/2 c. sugar and 1/2 c. corn syrup cooked on the stove. Cook until it starts to boil. Do not let it boil even one minute.
