3-4 not-quite-ripe fresh tomatoes
Salt and pepper
2 eggs, beaten, mixed with a little water
2 cups fine cracker crumbs
Oil for frying

Directions:
Directions:
Cut the tomatoes into 1/4 inch slices and dip them in the beaten eggs, salt and pepper mixture. Then dip the slice into the cracker crumb mixture and then place each slice in a pan with hot oil. Fry on both sides until golden brown. Sprinkle with salt. Eat hot!
