3 lb onion, peeled
1/2 cup of butter
1 1/2 Tbsp. paprika
1 bay leaf
3/4 cup of flour
3 qt. canned beef broth (low sodium)
1 cup white wine
2 tsp. salt
French Bread - one loaf
1/2 lb mozzarella - sliced

Directions:
Directions:
Slice onion thin. Melt butter in large soup pot. Place onion in butter and saute slowly for 1 1/2 hours. Add pepper, salt, paprika, bay leaf, and flour; stir to mix. Saute over low heat for 10 minutes. Add broth and wine; simmer for 2 hours. Fill ovenproof bowls; top with 2 inch slice of bread and cheese. Place under broiler until cheese is bubbly and brown.
