2 cups white sugar
1/2 cup light corn syrup
1/2 cup hot water
1/4 tsp. salt
2 egg whites
1/2 cup finely chopped pecans - optional
maraschino cherries - optional

Directions:
Directions:
In a saucepan combine sugar, corn syrup, water and salt. Cook and stir until sugar dissolves and mixture comes to a boil. Cook to hard ball stage or candy thermometer reaches 250. Without stirring, wipe crystals from side of pan with fork wrapped in damp cloth. Remove from heat. Beat 2 egg whites stiff. Pour hot syrup slowly over egg whites and beat at high speed for about 5 minutes. Add vanilla and continue beating until mixture forms soft peaks or loses some of it's gloss. Pecans can be stirred in at this time. Drop by teaspoon on wax paper or buttered paper. Store in covered container.

Optional: Cherries or pecan halves can be placed on top of each piece of candy.
