1/4 cup olive oil
2 garlic cloves, chopped
46 ounce can of vegetable or chicken broth
2 heads escarole, washed and drained
2 cans great northern beans
water
salt
pepper

Directions:
Directions:
Saute garlic and oil in a soup pot. Add broth. In a second pot, bring 2 quarts of water to a rapid boil. Add escarole and blanch for 1 minute. Drain. Add escarole to broth mixture and simmer 5 minutes. Add beans and simmer for 2 to 3 minutes longer.
