1 1/2 c. diced cooked chicken breast
1 1/2 c. cooked rice
2 t. finely chopped onion
1/2 c. chopped walnuts (optional)
1 can cream of chicken soup
1 T. lemon juice
1 c. chopped celery
1/2 t. salt
1/2 t. pepper
1/4 t. ground red pepper
3/4 c. mayonnaise
1/4 c. water
2 c. coarsely crumbled potato chips
3 hard boiled eggs

Directions:
Directions:
Combine first 10 ingredients in large bowl. Combine mayonnaise and water with whisk until smooth. Add mayonnaise mixture to chicken mixture. Chop or slice eggs and add to chicken mixture. Gently fold together. Spoon mixture into a greased 11x7 baking dish. Top with potato chips. Bake uncovered at 400 for 15-20 minutes or until bubbly.
