1 - 14 oz light coconut milk
2 c. 1% milk
1/2 c. uncooked white rice
1/4 c. unpacked brown sugar
1 tsp. vanilla extract
1/2 tsp. ground cinnamon

Directions:
Directions:
1. In medium saucepan, combine coconut milk, 1% milk, rice and brown sugar.
2. Bring to simmer over low heat. Cover and simmer for 1 hour. Watch at first to make sure it doesn't boil over. Stir frequently.
3. Remove from heat. Stir in vanilla and cinnamon. Can be served warm or cold. Store in refrigerator.
