Zucchini Eggs Flour Oil (just enough to coat bottom of pan) salt & pepper
Slice Zucchini. Beat eggs. Mix flour and bread crumbs. Dip zucchini slices in egg, cover in dry ingredients, then dip in egg mixture, then in dry ingredients. Fry in oil until golden. Remove and season with salt & pepper to taste.
