1 cup sugar
3 egg yolks
1 cup water
1 TB flour
1 TB butter
1 lemon rind and juice

Directions:
Directions:
Mix all of the sugar, yolks, water, flour, butter and lemon rind and juice mixture together in a bowl. Cook in a pan on the stove until thickened. Cook a 9 inch pie crust in a glass dish in a 400 oven for 15 minutes or until slightly brown. Be sure to prick the crust with a fork so it doesn't shrink too much as it bakes. Cool.
Add the lemon mixture. Add the meringue from the 3 egg whites which have been whipped to peak stage to the top of the pie and bake for 15 minutes in a 350 oven until slightly brown.
