1 lb. skinless, boneless chicken
2/3 c. cashew nuts
2 green onions
1/3 c. oil
1/3 t. salt
2 t. dry sherry
2 t. soy sauce
1 T. water
1 t. cornstarch
2 fresh red/green peppers, chopped

Directions:
Directions:
Dice chicken and marinate with salt, dry sherry, soy sauce, water and cornstarch for 20 minutes. Chop onions 1/2 inch long. Heat oil and stir fry chicken until done. Add onions and peppers. Stir fry until peppers are done. Add cashews. Mix well and serve over rice.
