fresh haddock (about 1/2lb per person)
Italian bread crumbs 1cup
grated cheese( Romano is what I use) 1/2cup
olive oil 4Tbs
butter 3Tbs

Directions:
Directions:
In a large skillet heat oil and butter on medium high heat (you will see the oil ripple). Mix bread crumbs and cheese on a plate and mix gently. Lay fish on top of mixture, coating both sides.When fish is coated evenly, very carefully lay fish into hot pan. Cook on each side approximately 3 to 5 minutes; it should have a light brown coating and fish should flake easily.
Makes an easy light quick supper!!
