"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Corn Casserole, by Joe C, is from The EWEN Family Cookbook Project,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 sleeve Ritz crackers 1 can corn kernals(drained) 1 can creamed corn couple pads of butter 1/4 cup whole milk or half and half
Preheat oven to 350º. Crush the Ritz crackers. I put them in a ziplock and then beat the sh.. out of them. Mix together the crushed crackers and both cans of corn. Put this mixture into an 8x8" PAM sprayed pan. Put a few pads of butter on top and drizzle the milk over everything. Bake at 350 for 25-30 minutes.
This is probably Joe's favorite vegetable..if you call corn a veggie. It is easy, fast and pretty good.
