2 oz. Bakers unsweetened chocolate
1 bar German sweet chocolate
3/4 tsp. salt
6 c. whole milk
3 c. sugar
6 eggs
2 drops almond flavoring
3 T. vanilla
2 c. whipping cream; whipped, unsweetened

Directions:
Directions:
In a double boiler, melt the chocolate, salt , milk, and sugar until scalded and blended.
Separate eggs. Set the egg whites aside and lightly beat the yolks. Slowly pour a thin stream of the beaten yolks into the milk mixture, stirring constantly. Cook until slightly thickened as custard.

Remove top of double boiler and refrigerate until thoroughly chilled. Stir in the almond and vanilla flavorings. In a separate bowl, beat egg whites until soft peaks form. Fold into the chilled custard. Beat the whipping cream in a chilled bowl until soft peaks form. Do not sweeten. Fold into the custard. Place the custard into an ice cream freezer, and follow manufacturers instructions.
