1 head Romaine lettuce
1 head iceberg or red leaf lettuce
10 oz. artichoke hearts
10 oz. hearts of palm
4 oz. pimientos
1 red onion
1/2 c. Parmesan cheese
salt and pepper
1/2 c. Canola oil
1/3 c. red wine vinegar

Directions:
Directions:
Tear lettuce into bite-size pieces. Drain and chop artichoke hearts and hearts of palms; drain pimientos. Thinly slice red onion. Mix together salt, pepper, oil and vinegar. Toss all ingredients; top with cheese.
