2 1/2 c. long grain rice
juice of two limes
small bunch cilantro
small clove garlic

Directions:
Directions:
In a medium sauce pan cook chopped cilantro and garlic in 2 tbsp. oil for 3-5 minutes. Add 4 cups water or chicken broth to the pan. Add lime juice and rice. Bring to a boil, cover and simmer until liquid is absorbed.
