1 eggplant, cubed
1 can mushroom soup
1/2 cup milk
1/2 cup cubed Velveeta
1 lb. hamburger
onion, optional
green pepper, optional
noodles or macaroni or rice

Directions:
Directions:


Brown hamburger. Add soup, milk, cheese and remaining ingredients. Add cooked pasta or rice. Put in lightly greased casserole dish and top with crushed cracker crumbs. Bake at 350 for 25 minutes until heated through and browned on top.
