Butter or margarine, melted
Calaway's Greek Seasoning
Parsley flakes, optional

Directions:
Directions:
Take roast and pierce with a paring knife, on top and bottom. Pour melted butter or margarine over roast making sure to cover the entire area. Generously cover meat with Greek seasoning, then massage into the butter, again making sure to cover the entire roast. Do this on top and bottom. Use parsley to cover the top of the meat for a decorative touch if desired. Bake at 250 for 2-1/2 hours (cooking times may vary depending on size of roast). Slice and serve with Au Jus.
