1 rotisserie chicken, chopped into bite-sized pieces
3 c. uncooked brown rice
water for rice (amount listed on rice label)
3 T. cooking oil
sliced green onions, to taste (optional)
3-5 eggs
soy sauce (low sodium is best)
1/2 pkg. fried rice seasoning mix (found in ethnic aisle)
1-2 pkg. frozen mixed vegetables

Directions:
Directions:
Cook brown rice according to back/box directions.
Cool 30 minutes. Heat 2 tablespoons of oil in large saucepan or wok. Add rice; stir to brown evenly, 5 minutes. Stir in green onions. Move rice to one side of pan. Add 1 tablespoon of oil to empty side of pan. Add eggs, scramble and cook until firm. Add soy sauce to rice (10 shakes). Add of fried rice seasoning packet. Incorporate cooked eggs into rice mixture and mix well. Add chicken to heat through. In microwave, heat frozen vegetables according to package directions. Serve rice with vegetables on top.
