8 oz. crushed pineapple, drained (reserve 1/4 c. juice)
1 pkg. Duncan Hines classic yellow cake mix
1 c. water
1/3 c. vegetable oil
3 lg. eggs
1 t. rum extract
1/2 c. flaked coconut
12 oz. Cool Whip Lite
1/2 t. rum extract
1/4 c. flaked or toasted coconut

Directions:
Directions:
Heat oven to 350. Grease bottom and sides of 9x13 pan with shortening; lightly flour. Drain pineapple in colander, reserving 1/4 c. juice. Beat cake mix, water, reserved pineapple juice, oil and eggs on low speed 2 minutes. Add crushed pineapple and rum extract, beat until blended. Bake 30-32 minutes or until lightly golden. Cool completely. Mix 1/2 t. rum extract into Cool Whip topping. Frost cooled cake. Sprinkle top of cake with coconut. Cover and refrigerate.
