2 cups sugar
4 eggs
1 cup salad oil
2 cups flour
3 tsp. cinnamon
2 tsp. soda
1 tsp. salt
3 grated carrots

Directions:
Directions:
Beat the sugar, eggs, and oil together. Sift together the flour, cinnamon, soda, and salt and add to the first mixture. Lastly add the carrots. Bake in a greased pan at 350 for 45 minutes to one hour.

Icing: Blend together 1/2 cup soft butter or margarine, 1 - 8 oz. pkg. cream cheese, 4 cups powdered sugar, 1 tsp. vanilla, and 1/2 cup chopped nuts. Spread on cooled cake.

The icing recipe makes a very thick, sweet icing. I make only half a recipe.
