1/2 C Onion, chopped
2 Cloves Garlic, pressed
1 tsp Olive Oil
30 oz Spaghetti Sauce
2 tsp Oregano
8 oz Manicotti Noodles, uncooked
3 C Mozzarella Cheese, shredded
15 oz Ricotta Cheese
10 oz Spinach, chopped
2 Eggs
1/2 C Parmesan Cheese

Directions:
Directions:
Saute onion and garlic in oil. Stir in 3/4 of the pasta sauce and all the oregano. Let simmer for 10 minutes. Prepare the manicotti as package directs. Combine in a separate bowl 2 cups of mozzarella, ricotta, spinach, eggs and Parmesan. When manicotti are cooked, stuff them with spinach mixture and arrange in a greased 13X9 inch baking dish. Spoon remaining sauce evenly over the manicotti and top with the remaining mozzarella cheese. Bake at 350 for 30 minutes. Let stand for 10 minutes before serving.
