4 carrots, coarsely chopped
1 large potato, peeled and cut into chunks
5 cups (1.25L) chicken broth
1 tsp apple pie spice
1/2 cup half and half cream
sea salt and pepper, to taste

Directions:
Directions:
Combine first 4 ingredients in pot. Simmer for 20 minutes until vegetables are fork tender. Blend in food processor or blender until smooth. Return to pot. Whisk in cream and season to taste with sea salt and pepper. reheat and serve.
