"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

4 avocados
1 small onion, minced
1 roma tomato, minced
1 jalapeņo pepper, seeds removed and minced
juice from two limes
salt and pepper to taste

Directions:
Directions:
Slice avocados in half long ways. Remove pit and discard. Remove avocado from skin being careful not to damage one skin half. Place avocado in a mixing bowl and mash with a fork and set aside. Using the avocado skin as a small mixing bowl, combine the jalapeņo pepper, salt and pepper. Add lime juice and stir. Pour lime juice mixture with remaining ingredients into the avocados and mix well. Chill for one hour and serve.

Personal Notes:
Personal Notes:
I learned how to make this while on a trip to Mexico. And although I didn't write it down I have made it successfully from memory several times. I never skip mixing the jalapeņo peppers, lime juice, salt and pepper in the avocado shell. I don't know why but it's one of those things that make it better. Enjoy!
