2 lbs ground chuck
3 eggs
1 tsp salt
1 tsp pepper
3-4 tbl. parmesan
1 lg. onion
2 stalks celery

2-3 oz of olive oil (Colavata oil is good)

2 tbl. chopped parsley or dry parsley
1 cup of bread crumbs. Mix of italian and plain

food process onion and celery till chopped fine
Mix all ingredient, except oil, until mixture can be formed into balls.
In a heavy skillet add oil and heat on high
Brown meat balls on all sides
Add meatballs to sauce the last two hours of sauce cooking time
