3 lg cans of crushed tomatoes (Hunts is always sweet)
3 sm. cans of tomato sauce
1 lg. can of tomato paste
1 cup cold water
1 tsp. salt
1 tsp. pepper
3-4 tablespoons sugar
4 lg garlic cloves
4 lg. bay leaves
2 oz olive oil
4 oz red wine or port
1 tsp. red pepper
3-4 tablespoons Parmesan cheese
1 pinch thyme
1 pinch rosemary
1 pinch basil

Mix first six ingredients in soup pan. Add rest of ingredients stirring constant over high heat. Bring to slow boil, reduce heat to simmer. Continue to stir about every 15 minutes (no lid). Cook all day to thicken. The longer you cook the thicker it will get. If you don't want thick cook less time. Add more of the ingredients for taste if needed. If tomato taste to strong add more sugar.

You have to use your taste to know what to add. You can multiply the ingredients, so you have plenty for freezer. Reheated sauce is always better.
