1 lb. Italian Sausage
1 tsp. minced garlic
1/2 c. chopped onion
1-2 cans diced tomatoes
8 oz. can tomato sauce
4-5 c. beef broth
1/2 tsp. basil
1/2 tsp. oregano
salt/pepper ( to your taste)
1 c. sliced carrots
1 c. sliced zucchini
8 oz. dried tortellini
(opt.) 1 small box chopped frozen spinach

Brown sausage and drain all but 1 Tbsp, saute onions and garlic in drippings. Move to a large sauce pan, stir in broth, tomatoes, tomato sauce, carrots, seasonings, and sausage. Bring to a boil, reduce heat and simmer uncovered for 30 min. Stir in zucchini, spinach, and simmer covered for 20 min. Add tortellini and continue to boil for 10 min. or until tender.
