1 1/4 lb. turkey tenderloins (2 tenders)
1/4 tsp. salt
14/ tsp. freshly ground pepper

Apricot Sauce:
2/3 cup apricot preserves
2 cloves garlic, minced
1 T. Dijon mustard
2 T. reduced sodium soy sauce

Directions:
Directions:
Line a roasting pan with foil and spray with cooking spray.
Season tenderloins with salt & pepper; place in prepared pan.
Combine Sauce ingredients. Mix well; spoon some over turkey. Roast in 400 oven for 35-40 mins, basting frequently with sauce, until an instant read thermometer inserted into thickest part of meat reaches at least 160.
Let turkey rest for 10 min. before cutting. Cut crosswise into 1/2 inch thick slices.
