1 c. flour
Dash of salt
2 T. sugar
1/2 c. butter

1 1/4 c. sugar
1/3 c. cream
21/2 c. finely-cut rhubarb
2 T. flour
3 egg yolks

3 egg whites
1/4 tsp. cream of tartar
6 T. sugar


Crust:Mix flour,salt,sugar and butter together, and pack into a 9X9-inch pan. Bake at 325 until golden. Cool.
Filling: Combine sugar,flour,cream,egg yolk and rhubarb. Cook over low heat,stirring often until thickened. Pour onto crust.
Meringue: Beat egg whites,sugar and cream of tartar to stiff peaks. Spread on top of filling and bake at 350 until meringue is golden.
