5 - 6 lb. chuck roast with bone

SAUCE:
1 bottle ketchup
1 stalk celery, finely diced
1 green pepper, finely diced
1 tsp. pepper
3 T. Open Pit BBQ sauce
3 T. vinegar
1 large onion, chopped
3 tsp. Tabasco sauce
2 T. chili powder
2 T. salt
1 1/2 c. water
2/3 c. brown sugar

Cut meat into five or six pieces. Place beef in large kettle with 1 c. water and bring to a boil. Meanwhile, mix together sauce ingredients. Pour sauce over meat and lower heat to a simmer.

Simmer four hours covered, and another four hours uncovered, until meat falls off the bone. Add more water, if needed. May substitute crock pot, if preferred. Remove meat from kettle and pull apart with forks. Discard bone.
