2 c. nine bean soup beans
2 qts water
1 lb ham - diced
1 large onion - chopped
1 clove garlic - minced
3/4 tsp. salt
1 can diced tomatoes
2 fresh green chili peppers - chopped
1 tsp. chopped basil

Directions:
Directions:
Sort and wash the beans; place in a Dutch oven. Cover with water 2 inches above beans - soak overnight.
Drain beans and add 2 quarts water, ham, onion, garlic and salt. Cover and bring to a boil; reduce heat and simmer until beans are tender. Add tomatoes, chilies and basil. Simmer an additional 30 minutes stirring occasionally.
