1 bunch spinach, wash /dry
2 small red onio, sliced thin
1 small package dried cranberries
c slivered almonds, carmelized
2 T sugar

POPPYSEED DRESSING
c. salad oil
2 T. rice vinegar
2 T. sugar
tsp. salt
tsp. almond extract
1 T. poppy seeds

Directions:
Directions:
Prepare all salad ingredients in large bowl, excluding almonds and sugar. Carmelize the almonds by combing them with 2 T. sugar in a saucepan, over medium heat.
Stir constantly until sugar liquefies and almonds turn golden brown. Spread almonds on foil to cool, then break apart.

Mix all ingredients for salad dressings. Toss in greens just to moisten. Top with carmelized almonds before serving.
