2 pounds shredded hash brown frozen potatoes
1 small carton sour cream
1/2 cup butter
1 tsp salt
1/4 tsp pepper
1 can cream of chicken soup
10 oz American cheese, grated
1/4 cup onion, chopped (optional)

Directions:
Directions:
Heat all ingredients, except potatoes in a large pan until cheese is melted. Take pan off burner and mix in potatoes. Pour into 9x13 baking dish and sprinkle cracker crumbs over top. Bake one hour at 350. Freezes well.
