1 lb lean ground beef
1 can diced tomatoes
1/2 tsp ground black pepper
2 green bell peppers, chopped
1 small onion, chopped
1 tsp Chili powder
1 tsp Garlic powder
1/4 tsp salt
3/4 C shredded cheese
2 large baking potatoes, scrubbed and thinly sliced

Directions:
Preheat oven to 350. Spray 9X13 baking dish. Spray a non stick skillet. Brown ground beef, onions and bell peppers, stirring as needed. Cook until beef is browned and veggies are softened. Add tomatoes and spices, cook until spices are blended. Arrange alternate layers of potatoes and beef mixture in the baking dish. Cover with foil and bake 40 minutes, uncover and sprinkle with cheese. Bake until potatoes are cooked through and cheese is melted (approx. 10 more minutes).
