2 1/4 C flour
1/2 C light brown sugar
1 Tbsp ground ginger
1/2 tsp baking powder
1/2 tsp salt
1 C unsalted butter
1/2 C finely chopped crystallized ginger *

Directions:
Directions:
Preheat oven to 350
Lightly butter a 9x13 pan
Combine flour,brown sugar,ginger, and salt in a mixing bowl.
Add the butter and cut with pastry blender until mixture makes fine crumbs
Add crystallized ginger, stirring with a fork to blend evenly
With lightly floured fingertips, press the mixture evenly into the prepared pan
Bake on center rack for about 20min, or until the edges are lightly browned.
cool in the pan on a wire rack before cutting.
