2 c. sugar 11/2 c. shortening 2 c. mashed sweet potatoes 2 c. self rising flour 1 c. chopped pecans 1 tsp. cinnamon 2 tsp. vanilla
Beat eggs. Add sugar, oil, and potatoes. Blend in other ingredients. Bake in 3 greased and floured 9 in. cake pans. Bake at 325 for about 30 minutes. Let cool completely. Put the icing (see following recipe) on the cake and sprinkle with toasted crushed pecans.
