1/2 C. Butter
3 Eggs
1 C. Flour
1 C. Milk
1 tsp. Salt
1 tsp. Baking Powder
4 C. Chopped fresh spinach or 2 10oz. pkg. frozen chopped spinach
1 lb. Monterey Jack cheese, grated

Directions:
Directions:
Melt butter and pour into a 9x13 pan. In bowl, beat eggs, add flour, milk, salt, and baking powder. Cook spinach and drain very well. Add the cooked spinach and cheese to the egg mixture. Mix well. Spread into pan and bake at 350 for 35 minutes.
