1/4 c. butter
1/4 c. chopped onion
1/4 c. flour
14.5 oz. chicken broth
12 oz. evaporated milk
2 large or 3 medium baking potatoes
TOPPINGS: fried bacon bits, shredded Cheddar cheese, green onions

Directions:
Directions:
Microwave potatoes until tender. In a Dutch oven or sauce pan, melt butter and add onion. Cook 1-2 minutes. Stir in flour to create a roux (thickening paste). Gradually stir in broth and milk. Scoop pulp from 1 potato and mash into the broth. Dice the rest and add to broth. Allow to simmer 15-20 minutes to thicken and cook off flour used to thicken. Serve immediately or chill and reheat later. Yield: 4-6 bowls.
