2 large carrots, grated
1 cup raisins
1-1/3 cup cold water
1-1/3 cup sugar
2 tablespoons butter
2 cups flour
1 teaspoon cinnamon
2 teaspoons soda
1 teaspoon cloves
1 teaspoon nutmeg
1/4 teaspoon salt
1 cup nuts

Directions:
Directions:
Boil together carrots, raisins, cold water, sugar and butter for 5 minutes; then cool. Sift dry ingredients together and add to carrot mixture. Blend in nuts and bake in loaf or bundt pan for 1 hour at 350 oven.
