1 9" pie shell
8 oz. bulk pork sausage
3 green onions, chopped
2 garlic cloves, minced
1 bag fresh spinach, cooked, chopped and squeezed or 1/2 pkg frozen chopped spinach, thawed, drained and squeezed dry
1-1/2 c. grated Monterey Jack cheese
3 large eggs
1 1/2 c. half & half or whole milk
1/2 tsp. salt
1/8 tsp. white pepper
1/2 tsp. dried oregano
1/4 c. grated Parmesan cheese

Partially bake pie shell at 450 for 8 minutes. (unpricked). Cool pie shell slightly on rack. Reduce oven temp to 350. In medium skillet over medium high heat, cook sausage, green onion and garlic for 6 minutes. Break up sausage as you cook. Add oil if needed. Stir in spinach. Sprinkle Monterey Jack cheese into pie shell. Add sausage-spinach mixture. In medium bowl whisk eggs, half & half, salt, pepper and oregano. Pour egg mixture over mixture in pie shell. Sprinkle w/ Parmesan cheese.
Bake quiche for 40-45 minutes or until knife inserted comes out clean. Let stand for 10 minutes.

I cut this out of a newspaper a long time ago. I still see it appear periodically. I have served for a group and cut smaller wedges and served w/ fruit and muffins.
