1-3 pound eye of round roast
10 hot Italian sausages

2 TBS olive oil, 3 inch cubes
2 bell peppers
2-8 ounce cans tomato sauce
2 medium onions, quartered
1/2 cup parsley, chopped
1/2 cup parsley, chopped
1 tsp oregano
3 cloves garlic, chopped fine

Directions:
Directions:
Heat oil in skillet, add sausages and brown a few at a time. Place on paper towel to drain. Cut 2 cloves of garlic into sliver, with a knife cut pockets into roast and insert garlic slivers. Season roast with garlic powder and pepper to taste. Brown roast on all sides, remove to paper towels to drain. In slow cooker, add 1 can tomato sauce, place roast in center and arrange sausages around roast. Add onions and garlic. Add remaining can of tomato sauce and cook on high heat for 2 hours, add green peppers and cook on high for an additional 1 hour. Remove roast and slice thinly. Return roast to slow cooker and simmer on low for 30 minutes. Serve on brat buns or over pasta. Garnish with freshly grated Parmesan cheese.
