1-3/12 pounds smoked chicken, skinned
6 medium ripe tomatoes, peeled, seeded, and coarsely chopped
2 medium onions, thinly sliced
1 Tablespoon peanut oil
2 Tablespoons low sodium soy sauce
2 habanera chilies, pricked with fork

Directions:
Directions:
Wash chicken, pat dry with paper towels, cut into serving pieces. Place chicken and remaining ingredients in a heavy saucepan or Dutch oven. Bring to boil, then reduce heat to low and simmer, uncovered, stirring occasionally, for 20 minutes, or until the flavors have mixed and the onions are tender. When the dish has reached the desired degree of hotness, remove the chilies and reserve. Serve hot with white rice.
