1/2 lb. russet potatoes
1/2 cup chopped onion
3 tbsp. flour
3 tbsp. butter or margarine
1 tsp.salt
1/8 tsp. pepper
2 1/2 cup milk
1 c grated cheddar cheese
1 1/2 cups cooked, diced ham



Directions:
Directions:
Peel and slice potatoes. Saute onion in butter. Blend in flour, salt, and pepper. Gradually add milk, cooking and stirring until sauce is thickened. Blend in 3/4 c cheese. Alternate layers of sliced potatoes, ham, and cheese sauce in buttered 2 1/2 qt. baking dish. Cover and bake at 350 for 1 hour. Uncover. Sprinkle with remaining cheese and bake an additional 15 minutes or until potatoes are tender.
