Blueberry Bread Recipe

2 c. flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1 beaten egg
2 tbsp. shortening

1/4 c. orange juice
1 tbsp. grated orange rind
Boiling water
1 c. blueberries (fresh or thawed if frozen)
1/2 c. chopped walnuts

Combine flour, sugar, baking powder and salt in large bowl. In separate bowl, beat 1 egg and shortening, set aside. In separate bowl mix orange juice, orange rind, and boiling water to make total 1 cup of mixture, then combine with egg mixture & mix with dry ingredients. Fold in blueberries & walnuts. Pour mixture into greased loaf pan, bake at 350 for 60 minutes.
