2 1/2 qts. beets
2 cups apple cider vinegar
1 cup water
2 cups sugar
1 Tbsp. mixed pickling spices (wrapped in cotton cloth)

Final Ingredients

1/2 cup vinegar
1/2 cup sugar

Directions:
Directions:
Boil beets until tender. Peel skins off and cut into slices. Mix together 1st set of ingredients in a bowl and pour over beets and bring to a boil for 5 minutes. Remove beets only from juice and place into hot jars. Then add the second and final ingredients of sugar and vinegar to hot contents previously beets were boiled in and bring to boil again. Pour over beets in jar and place hot lids to seal. Maybe be stored anywhere until opened.

Make sure that you use the double lids. The ones that have a flat top and then a screw on lid on top. Use hot lids and jars to seal.
