1 lb. large, firm mushroom caps
1/4 cup sliced green onion (2)
1 clove garlic, minced
1/4 c. butter
1/2 c. fine dry bread crumbs
1/2 c. shredded Cheddar, smoked Gouda or crumbled blue cheese
2 strips crisp cooked bacon, crumbled

Wash mushrooms; remove stems and reserve them.
On a cookie sheet place mushroom caps, stem side down. Lightly coat w/ cooking spray. Bake in 425 oven for 4-5 minutes. When done, carefully drain on paper towels. Chop enough of reserved stems to make 1 cup. In medium saucepan cook the chopped stems, green onion, and garlic in butter until tender. Stir in bread crumbs, cheese and bacon. Spoon crumb mixture into mushroom caps. Return stuffed mushrooms to baking pan and bake in oven for 8-10 minutes.
