4 boneless, skinless chicken breasts
2 Tbsp. oil
1 envelope (7/8 oz.) chicken gravy mix
1 cup water
2 tsp. soy sauce
1 can (4 oz.) sliced mushrooms
1 medium onion, thinly sliced
6 oz. frozen pea pods*
1/4 cup salted cashew nuts (optional)

Cut chicken into bite-sized pieces. Heat oil in skillet; add chicken and cook 5-10 minutes
or until pieces are cooked through. Add gravy mix and water. Cook, stirring until gravy
thickens. Add soy sauce, mushrooms, onions, and pea pods. Simmer, stirring occasionally
for 5 minutes. If desired, sprinkle chicken with nuts before serving. Serve over rice or
chow mein noodles.
* frozen peas can also be used.
